The installation ВДИ-10 is destined for continuous dosing of ingredients. The concept of the installation is based on the principles "HI TECH” and "Know-How”, which enables a considerable reduction in time, energy and ingredient consumption during treatments of must and wine materials. The yield of the clarified product is considerably increased due to a thicker sediment whose volume becomes twofold lower. The wine material to be treated becomes limpid, which leads to a dramatic reduction in filtering aid consumption.

both in oxidation of the product and in loss of its aromatic
qualities. The use of the confrod-free drive instead of the
conventional crank drive underlies these advantages.

bentonite dose to be applied in treatments of wine materials.

The
installation is to be incorporated into the process flowsheet of
yeast autolysate preparation as major technological element as well
as for preparing bentonite slurry in technological treatments of
grape must and wine materials for the purpose of their clarification
and stabilization.
The work cycle to produce yeast autolysates is as follows: processing
of yeast mass in the installation → seasoning of processed yeast mass in the tank
for 10 days (to obtain a concentrated yeast autolysate) or addition of yeast
mass immediately after the processing to a wine material at a suitable dose with
a subsequent seasoning for 10 days (this enbles a reduction in protein
mass-concentration of the wine material due to the effect of active proteolytic
enzymes). As a results, the wine material becomes enriched with products of
yeast autolysis.

The installation is
manufactured mostly of stainless steel. Special features: A
disintegrator of special design enters as the working organ of the
installation. During the cyclic pumping-over of the product, it
enables the latter to be processed in the cavitaion regime. Thisguaranteesyeastmassinactivationandbentoniteslurryactivation.
No foreign
or home-made devices similar to the installation are known. It
enables complete yeast autolysis and improves quality of
champagne-type and sparkling wines, table and fortified wines and
brandy spirits.
